In the middle of our practical today, our chef called us into the neighbouring labo. A welcome relief from my croissant nightmare. Here is the sight that awaited us:
A short-course (for experienced patissiers) on special Easter products was just coming to a close. They had churned out some cracking stuff, all in chocolate. The velvet effect on the elephant and dog (?) is created by spraying on liquid cocoa butter with an airbrush.
